Smoked duckling breast & mango salad on toasted brioche. “Duo of salmon”: Home cured salmon (gravlax) and Norwegian smoked salmon served with truffled potato salad, honey-mustard-dill sauce and horseradish cream. Cepe mushroom cream soup with roasted parma ham & truffle oil. Baked puff pastry parcel filled with a ragout of duckling breast portobello mushrooms, goose liver served with light marsala sauce. Pineapple-coconut sorbet. Traditional roasted turkey with chestnut-apple-raisin stuffing red cabbage, brussed sprouts and roast potatoes turkey gravy & cranberry sauce or Braised Australian veal cheeks served with saffron-rosemary, mashed potato cherry tomatoes, green asparagus. Traditional English Christmas pudding with brandy sauce or Honey-almond parfait in caramel sauce served with forest fruit compote & fresh berries.
